RESTAURANT SERVICE ATTENDANT


General Program Description

The Restaurant Service Attendant Program prepares the students to work as entry level restaurant service attendants. The students learn History and Geography of Puerto Rico, related Mathematics, communication skills in Spanish and English, hygiene and sanitation, table service and wine service, banquets, etiquette and protocol, and other restaurant service-related complements.

The Restaurant Service Attendant Program complements the theoretical fundamental education with practice laboratories at the school. The practice experience is conducted under the supervision of experts in the subject in real work scenarios.

General Objectives

During the course of the Restaurant Service Attendant program the student:

1. Will identify the more significant events in the History and Geography of Puerto Rico and the impact of the development of restaurant service on the Island’s economy.
2. Will recognize the importance of hygiene and sanitation in the restaurant service industry
3. Will apply mathematical operations and analyses directly related to customer service.
4. Will develop effective communication skills in Spanish and English directly related to restaurant services.
5. Will develop basic table service, buffets, banquets, and protocol skills.
6. Will apply the appropriate techniques for the different food and wine service, and other complements.
7. Will show proficiency in the gueridon service techniques (service à la Russe).
8. Will show proficiency in the wine decantation fundamentals and other complements.
9. Will develop buffet-setting abilities.
10. Will learn and apply the correct etiquette and protocol techniques in the restaurant service.

Equivalencies:

The following applies in the calculation of the number of hours per credit:

1 theory credit =            15 contact hours
1 laboratory credit =   30 hours
1 practice credit =        45 contact hours

Available Schedules:

8:00 AM – 2:30 PM Monday through Friday (8 months duration)

4:00 PM – 10:30 PM Monday through Thursday (10 months duration)
